Dim Sum Delicacy

 

Dim Sum or Dumpling (Jiaozi, Jiao Zi) is a traditional popular food in China.
 
Dim sum is an expression in Cantonese, which means snack. Normally Cantonese only service dimsum for breakfast or brunch, cause Canton is in the rice area of China. Xi'an is located in the wheat area, the local people here could make more varieties of food with wheat and rice flours. The dimsums here are smaller in size, delicate in designs and more varieties in fillings.  
 
Xi'an Dim sum delicacy is brought forth new ideas in its color, fragrance, taste and style; meanwhile, is added ancient culture. Thus, the dumpling is no longer one kind of simple flour food.
 
The filling of Xi'an dimsum is unique, People make dimsums with not only traditional fillings, such as pork, beef, mutton and vegetables, but also chicken, duck, egg and sea food. It seems they use all the delicacies from land and sea, all the fresh and green. The method of cooking includes steaming, frying, toasting, etc.
 
Meanwhile, they add many tastes such as sour, sweet, peppery, hemp, etc. Concerning the style, they make out various pretty and lovely designs such as flower, bird, grass, leaves, fish, ect.
